Wild West Bento

The flavors for my bento are inspired by the part of the country which I call home. Mexican flavors have always been a big influence on the foods of Texas and the southwestern part of the United States. My bento dishes, Two Bite Fish Tacos with Fresh Ribbon Vegetables, Cilantro Lime Green Rice, Aduki Bean Salsa and Mango Orange Avocado Salad with Chile Citrus Dressing, are a healthy and tasty example of this influence.

Fish and mayonnaise for umami, lightly salted, sweet ripe fruit for sweet and salty, and citrus zest and juice for sour and bitter, give this bento its perfectly rounded flavors.
