I've got the idea to mix gastronomical traditions of Turkey and Japan and create Japanese Bento with some Turkish snacks. Also, I wanted this lunch to be healthy, so I preferred seasonal raw or steamed and slightly cooked ingredients, which still are full of taste, vitamins and energy. I also used fish, since there is fish season in Turkey recently and fish is widely used in Japan. And I love fish a lot! :) I hope to enter short list and visit Japan thanks to this contest and use this opportunity to discover more about traditional Japanese way of cooking fish.

Salad: - Cucumber - carrot - avocado - purple cabbage - Sauce: lemon juice, vegetable oil, vinegar, salt, black cumin(nigella) Lentil balls: - Red Lentils - Bulgur (can be replaced with rice) - Fresh dill, parsley, mint, - Cumin, black pepper, salt, tomato paste, vegetable oil - Mangold rolls -Mangold leaves (can be replaced with cabbage or spinach leaves) - Rice - Onion - Carrot - Vegetable oil, black pepper, cinnamon, allspice, salt, lemon juice White zucchini squash with Bonito fish balls - White zucchini -Bonito - Onion - Breadcrumbs or piece of bread - Ginger - Mint, dill, parsley -Black pepper, salt, vegetable oil

作り方

  • White zucchini squash with Bonito fish balls: Slice zucchini and cook over the grill pan for 3-4 min, put aside. Mix finely chopped bonito fillet with the rest of ingredients, form small balls, cover the half of balls with sesame and steam 5-7 min till ready.
