Cocktail Stuffed Egg with Wasabi Mayonnaise Spicy Pan Fried Pork with Mango Sautéed Chicken Breast with Pineapple Chunks Happy Tomato & Avocado Salad Easygoing Sliced Potatoes with Red Onion

- Cocktail Stuffed Egg with Wasabi Mayonnaise Boil egg in plenty of water for 8 minutes; rinse under cold running water; let cool. Once egg is cool, cut in half taking care to preserve the whites halves whole. Carefully take the yolks out, leaving the whites whole and firm. Mix a coffee spoon of wasabi with a teaspoon of mayonnaise. Mash the yolks with a fork adding the wasabi mayonnaise to make a thick paste. Blend in a tablespoon of finely chopped red onion and mix well. Fill the egg whites with this mixture and chill for 30 mins, or more, until ready to serve.
- Spicy Pan Fried Pork with Mango (option 1*) 100 grams of lean Pork Loin cut into bite sizes + ½ of a medium size Mango Mix cumin powder, ground cinnamon, pepper and brown sugar with a little white wine and set aside to marinate the cut pork for 15 minutes. Meanwhile cut the mango cheeks crisscross style and cut out the mango squares. Pan Fry the pork chunks in a teaspoon of butter and a little olive oil (E.V.), until brown. Turn off the heat and add the mango squares – stir everything well; keep warm Add a few drops of “jalapeño” tabasco. (Optional)
- Sautéed Chicken Breast with Pineapple Chunks (option 2*) 100 grams of Chicken Breast (skin off) cut into bite sizes + 1 cupful of pineapple medium pieces, 1 coffee spoon of finely minced garlic. Salt & pepper the cut chicken and add the garlic and blend well. Let stand for 15 minutes. Heat a level spoonful of olive oil (E.V.), and sauté the chicken until golden brown. Turn off the heat and add the pineapple chunks; stir to mix well, keeping the whole mix warm. To spice it up, you can add a few drops of “chipotle” tabasco. (Optional)
- Happy Tomato & Avocado Salad Half of a large Tomato, cut in wedges, half of a small Avocado, cut into medium chunks, Thin slices of Red Onion cut in half moon pieces. Dressing: 1 teaspoonful each of: soy sauce, sesame oil, lemon juice and black coffee. Mix everything together well.
- Easygoing Sliced Potatoes with Red Onion 1 medium to large size Potato, 1 coffee (expresso) cup full of Red Onion squares. Peel & cut the potato into medium thick slices. Boil potato slices in salty water, until tender but firm. Let cool. Meanwhile cut the onion into large squares; put in a colander and pour the hot water (from the potato) over the cut onion squares, to reduce the “sting”. Place everything in a large bowl. Dressing: Mix a teaspoon each of mustard and balsamic vinegar with a tablespoon of olive oil. Add salt & pepper to taste. Mix well and pour over the potato slices, making sure that all are covered with dressing. Sprinkle coarsely chopped cilantro leaves over the whole potato dish. (Options 1* & 2* can be decorated with thin slices of red bell peppers)
