Autumn Feast

Using a pumpkin shell instead of a traditional lunch bow to hold all the food which enables school students to discard their lunch box after lunch and not have to carry heavy lunch bags throughout the day.
Pumpkin as container, sushi rice with vinegar for some carbohydrates, eggs, salmon and scallop sashimi for protein and pumpkin flesh and boiled bak choy for fiber.Add pumpkin seeds for crunch.Using parsley leaves as decoration.
作り方
- Cut the pumpkin and scrape out the seeds with a spoon. Save some seeds and discard the rest. wrap the pumpkin with aluminium foil and roast in oven at 200 degree for 30 minutes.Put the seeds in at the last five minutes.
- Meanwhile,cook some sushi rice in a rice cooker. Add sushi vinegar when cooked.Let cool.
- Cut some fresh salmon into slices. Use pad to slightly press the scallop to remove excess water.Boil two bak choy for one minute and drain.Wash and dry some parsley leaves.
- Crack up one egg and whisk, then, fry in a small pan with a mold to hold a rectangular shape. Sprinkle some salt when done.
- Assemble the bento. Scrape some pumpkin flesh, leaving one cm thick of skin, press the flesh to the bottom of the pumpkin container. Layer the sushi rice on and press until the surface is smooth. Arrange the salmon,eggs, scallop and bak choy on top. Decorate with parsley leaves and sprinkle some roasted pumpkin seeds. Serve with some soysauce.
