The bento box contains the memory taste that famous Taiwanese dish contain. the salty and crispiness from the salty and crispy chicken which we can find in night markets. The bitter melon where we can eat in a typical restaurant and braised tofu and egg from the noodle/rice cart, finally, marinated cucumber which most families in Taiwan made themselves to go with congee! This bento will serve your heart and stomach for people miss Taiwanese food!

Materials (1 person)

  • Garlic / 2 table spoon chopped
  • Rice wine / 1 table spoon
  • Soy sauce / 1 cup
  • Potato starch / 0.5 cup
  • Flour / 0.5 cup
  • Basil leaves / a hand full
  • Tofu / 1 piece
  • Eggs / 3
  • Brown sugar / 1 table spoon
  • Cucumber / 1
  • Sugar / 1 table spoon
  • Salt / 1 table spoon
  • Rice vinegar / 1 table spoon
  • Rice / 2 cups
  • Minced pork / 0.5 pound
  • Vegetable oil / 3 cups
  • Chicken tender / 0.5 pound
  • Ginger / 1 small piece
  • Scallion / 1 stick
  • Salty eggs / 2
  • Bitter melon / 1

How to make

  • Slice the cucumber into short sticks and marinate them with rice vinegar, sugar and salt.
  • Sauté minced pork with chopped garlic and add soy sauce and brown sugar and 1 cup of water to let pork braise. When the soup boils, add in boiled eggs and tofu and let them braise with pork for at least 20 minute.
  • Chop chicken tender into cubes and add soy sauce, rice wine, chopped garlic and 1 egg to mix them up. Add flour and potato starch and mix them up until chicken gets the batter. Fry the chicken in hot oil until crispy and gold then add basil leaves to fry with the chicken for about 5 seconds.
  • Scoop away the seeds of the bitter melon and slice the melon into about 8cm long sticks. Boil the melon in boiling water for 3 min. Take the egg yoke of the salty eggs and sauté it with vegetable oil until bubble come out. Add scallion sticks and chopped ginger and the bitter melon and the egg white of salty egg then stir fry them until salty egg attaches to the melon.
