Happiness Bento

Duck breast with potatoes, parsley and pepper sauce. Green beans with pickled peppers and French dressing. Caramelized apple with powdered cinnamon.

apple for sweet, fried potatoes for salty, pickled peppers for acid, mustard for bitter, duck breast for umami.

Materials (1 person)

  • Salt
  • Vinegar / 10cl
  • Oil / 30cl
  • Pickled peppers / 10 g
  • Green beans / 60 g
  • Flour / 10 g
  • peppercorns / 1 teaspoon
  • creme fraiche / 10 cl
  • Parsley / 5 g
  • potato / 1
  • duck breast / 3
  • Pepper
  • Butter
  • Mustard / 1 teaspoon
  • Sugar /15g
  • apple / 1 half
  • Powdered cinnamon / 5g

How to make

  • Cook the duck breast in a frying pan with butter and oil. Add salt and pepper.
  • Peel and cut the potato. Cook it in a frying pan with butter and oil. Add parsley.
  • Smash the peppercorns. Put butter in a frying pan and add the cream. Slowly add the smashed peppercorns with flour and stir for 10 mins.
  • Pour the pepper sauce on the duck breast and serve with the potatoes.
  • Wash and cut the green beans. Cook them in a water bath and cool them.
  • Mix 3 tablespoons of oil, 1 tablespoon of vinegar, salt and pepper.
  • Add the pickled peppers to the green beans and pour the french dressing.
  • Peel and cut the apple in two. Cook the half apple in a frying pan with sugar and butter until it is caramelized. Sprinkle the powdered cinnamon on the apple.
